How to Cook Lion's Mane Mushrooms: 5 Easy Ways

If you've never cooked lion's mane mushrooms before, you're in for a treat. This shaggy, brain-shaped fungus is one of the most exciting ingredients in the culinary world right now — and for good reason.

Lion's mane has a delicate, sweet flavor that many people compare to lobster or crab. The texture, when cooked properly, is tender and slightly chewy. And unlike most mushrooms, lion's mane doesn't release much water, which means it sears beautifully.

1. The Simple Sear (Our Favorite)

This is the best way to experience lion's mane for the first time.

Slice the mushroom into 1/2 inch thick steaks. Heat a pan over medium-high with a generous amount of butter. Sear for 3-4 minutes per side until golden brown and crispy on the edges. Finish with salt, pepper, and a squeeze of lemon.

That's it. Seriously. Don't overcomplicate it.

2. Lion's Mane "Crab Cakes"

Shred the mushroom by hand into thin strands (it naturally pulls apart). Mix with an egg, breadcrumbs, Old Bay seasoning, mayo, and Dijon mustard. Form into patties and pan-fry until golden. Serve with remoulade sauce and chives.

People will genuinely think they're eating crab.

3. Creamy Lion's Mane Pasta

Tear the mushroom into chunks and sauté in olive oil with garlic until golden. Add heavy cream, parmesan, and fresh thyme. Toss with your favorite pasta. Top with black pepper and more parmesan.

4. Lion's Mane Tacos

Slice thin, sear until crispy, and pile into corn tortillas with avocado, sautéed onions, cilantro microgreens, sliced tomatoes, red lettuce and a squeeze of lime. Drizzle with chipotle mayo.

5. Grilled Lion's Mane Steaks

Slice thick, brush with garlic butter, and grill for 3-4 minutes per side. The smoky char combined with the sweet mushroom flavor is incredible. Serve alongside any protein as a side, or make it the main event.

Storage Tips

Keep your lion's mane in a paper bag in the fridge. Don't store in plastic — it traps moisture and speeds up spoilage. Fresh lion's mane lasts 7-10 days when stored properly.

Never wash mushrooms under running water. Just brush off any debris with a dry towel or soft brush.
